- 12 oz spaghetti
- 1 tbsp olive oil
- 1 small onion, thinly sliced
- 3 garlic cloves, minced
- 1 can (28 oz) crushed tomatoes
- 3 cups low-sodium vegetable broth
- ½ cup heavy cream
- ½ tsp kosher salt
- ¼ tsp black pepper
- ½ tsp red pepper flakes (optional)
- ½ cup fresh basil, torn
- Parmesan, for serving
Instructions
- Heat olive oil in a large pot. Sauté onion until soft, 4–5 minutes. Add garlic and cook 30 seconds.
- Add crushed tomatoes, broth, salt, pepper, and red pepper flakes. Bring to a simmer.
- Add spaghetti, stirring to submerge. Simmer 10–12 minutes, stirring often, until pasta is al dente.
- Stir in cream and basil. Simmer 1 minute more, then remove from heat.
- Serve with Parmesan and extra basil.
